Phew! This weekend has been a blur, to say the least! A family wedding on Saturday and moving into our new home (yay!) on Sunday has left this momma worn out!
The wedding was lovely, though, and it is indescribably nice to be in a house again with my little family after spending the last two years in a shoebox-sized apartment. We have space to stretch, and breathe, and create, and cook!
You know by now that I love cooking, and things like weddings inspire me to cook fancier things. I would say this dish qualifies as fancy.

I had some overripe bananas the other day, and decided I wanted to branch out from my usual banana bread. I perused Pinterest, and decided these tasty bars seemed like just the right thing. That brown butter frosting was calling my name.

Baileys Cream Cheese Brownies {and a GIVEAWAY!}

You guys, I am so excited to announce my very first giveaway! I recently reached 50,000 pageviews and 100 likes for my Facebook page, so to say thank you to my awesome readers, I decided to host a giveaway!

Spalted box elder is a lovely type of hardwood with beautiful streaks of pink and red running through the grain pattern.

On to the recipe! Baileys Cream Cheese Brownies with Bailey's Glaze. How scrumptious does that sound? Plus they're quick and easy, because you start with a boxed brownie mix. Of course, you could always go the extra mile and make the brownies from scratch, but these taste good enough as they are that I didn't think it was necessary.

Brownie Ingredients:
1 box brownie mix (plus ingredients called for on box)

Baileys Cream Cheese Swirl Ingredients:
8 oz. cream cheese, softened
1/2 C Baileys Irish Cream
1 egg
1/4 C powdered sugar
2 T flour

Glaze Ingredients:
1 1/2 C powdered sugar
1/2 C Baileys Irish Cream

Preheat oven to 350ยบ (or temperature specified on your brownie mix box).
Prepare brownie batter according to package directions and spread into baking pan. Set aside.


In a mixing bowl, combine cream cheese swirl ingredients. Beat until well blended.


Swirl cream cheese mixture into brownie mixture. To make this look all pretty, start by pouring/spooning the mixture in a rough zigzag pattern.


Then run a butter knife through the batter in a zigzag motion going the other direction.


Look how pretty and fancy-looking it turns out!


Bake according to the directions on the brownie mix. You may need to increase the time slightly.


Let cool and cut into squares.


Just before serving, prepare glaze. In a microwave-safe bowl, whisk together powdered sugar and Baileys Irish cream. Microwave for roughly 45 seconds or until warm. Stir and pour over brownies.


Tip: To make these kid-friendly, replace the Baileys in the cream cheese swirl with milk, and serve without the glaze. Save the glaze for Mom & Dad. ;)

Cookie Butter Cheesecake





I know what you're thinking: "Another cheesecake recipe? Really?" Yes, of course! Cheesecake is our dessert of choice around here, as you may have guessed after reading about my Beer Cheesecake or Pomegranate Cheesecake. This Cookie Butter Cheesecake was made for a recent party, and it was a hit!

Have you tried Cookie Butter from Trader Joe's? I'm really late hopping on this bandwagon. Of course, you have to travel 2 1/2 hours outside my hometown to even get to a Trader Joe's, so there's that. Even though I have been living in a big city for a few years now, Trader Joe's hasn't been a place I have frequented. But that's about to change, all because of this tasty little stuff they call cookie butter.


My husband had the idea to put it in a cheesecake. I did a quick search online, and it seemed like people were only swirling it on top of a cheesecake, but we wanted to use it as the flavor of the whole thing. So, I decided to create my own recipe, making the cookie butter the star of the show.


In fact, this whole cheesecake is really Trader Joe's inspired (and this is not a sponsored post; it just seemed like a fun thing to do). The crust is made with their Joe-Joe's sandwich cookies, and some of their delicious fudge sauce is drizzled on top.


For those of you who do not live close to a Trader Joe's, don't despair! You can obviously sub other brands of cookies and fudge sauce, and Amazon's got you covered in the cookie butter department! Seriously, you need to order some of this stuff!

To make the cheesecake, you will need:

Crust
5 chocolate graham crackers (10 squares) and 10 chocolate sandwich cookies with chocolate cream, OR 9 chocolate graham crackers (18 squares)
1/3 C butter, melted
1/4 C brown sugar

Filling
3 8-oz. packages cream cheese, at room temperature
1 C sugar
1/2 C sour cream
2 tsp vanilla
3 eggs
3/4 C Speculoos Cookie Butter

Sauce
Hot fudge sauce

Directions
Preheat oven to 350 degrees if using a silver springform pan; 325 for dark or non-stick pans.

Place graham crackers and cookies in a food processor.


 Process until you have fine crumbs.


Add the butter and brown sugar. I do this in the food processor, as well.


Press the crumb mixture on the bottom and halfway up the sides of an 8- or 9-inch springform pan.


Beat the cream cheese and sugar on medium speed until well blended.


Add the sour cream and vanilla, beating just until combined. It's important not to over-beat a cheesecake, because that can lead to cracking.


This stuff looks good just like this! If you can't resist trying a spoonful, do it now before the eggs are added in!

Add eggs one at a time, beating after each addition just until incorporated.


Stir in cookie butter, again being careful not to over-beat.


Pour into your prepared crust.


Bake 1 hour to 1 hour and 10 minutes, or until center is not quite set. Turn off the oven but leave the cheesecake inside and crack the door slightly. Leave the cheesecake in there for an hour, then place it on the counter to allow it to come to room temperature. After it has come to room temperature, place the cheesecake in the refrigerator.


When you're ready to serve the cheesecake, remove the sides of the springform pan.


Slice and dish out the cheesecake.



Such perfect, delicious slices!

Drizzle with hot fudge sauce just prior to serving.



For extra fun, do like we did and serve up your cheesecake with some of Trader Joe's two-buck Chuck!

Football Rice Krispie Treat

Most impressive-looking treats and desserts unfortunately also take a lot of time. Thankfully, that is not the case with this one! This no-bake dessert can be thrown together quickly--and kids can do a lot of it on their own! Because who wants to spend the day slaving over a festive dessert when there are friends to talk to and a game to watch?

I made one large football and a few mini ones from one batch. You can do that, or you can just make one giant one, or only make individual-sized ones. Whatever will work best for your party. Keep in mind that the more mini ones you make, the more you will have to frost, so that will make it a little less quick and easy. :)


 You will need:

1 pkg mini marshmallows
2 T butter
6 C Rice Krispies cereal
1 12-oz bag chocolate chips
White frosting

Before you start, make sure to have your serving platter ready and nearby. You don't want the treats to start hardening while you're getting your platter out of your cabinet and then realize you haven't used it in forever and it's a little dusty so you need to wash it...you know how those things go. At least that's how they go at my house. Anybody with me?

In a large pan, melt the butter and marshmallows over medium-low heat.
(Note: you can also do this part in the microwave, which is a great option for getting kids involved. I would recommend heating it on a lower power setting and stirring frequently).


Cook and stir until mixture is completely smooth. This should only take about 5 minutes on the stovetop.


Remove from heat. Stir in the cereal. Keep stirring until it is well mixed and the cereal is thoroughly coated.


Dump the entire pan onto the center of your serving platter if you are making one big football. If you are making mini ones, spoon smaller amounts around your platter. Try to work quickly.


Put a little cold water on your hands--you don't want them dripping everywhere, but you want your palms and fingers to have a nice thin covering of water. This will magically keep the treats from sticking to your hands.

Smoosh the Rice Krispie blob(s) into a football shape with your hands. Don't over-think it, just smash it sort-of flat and round, and then squish the ends into points. Or have your kids do this part.


If at any time the treats start sticking to your fingers, just apply a little more cold water.


I like to let the treats harden at this point, which doesn't take long. If you're in a hurry, however, go ahead and move on to the next step.

Dump your chocolate chips into a microwave-safe bowl.

I love it and had to find an excuse to use it in this post. So gorgeous; you will see it often!

Microwave on a low power setting for 1 minute at a time until the chips are melted. Remember when chocolate chips are melted in the microwave they retain their shape until they are stirred, so stir them thoroughly every minute to see if they are melted.


Frost the Rice Krispie football with the melted chocolate. You could make this even easier and just use chocolate frosting, but I like the taste of the melted chocolate better with the treats. I have also mixed peanut butter into the melted chocolate to use with this--delicious!


All you have left to do is pipe the laces! Don't be intimidated by this part if you have no cake decorating skills; it's very easy. You'll see below that I used a cake decorating bag and icing tip; if you don't have those (or you do, but don't feel like cleaning them afterward), simply put your frosting in a Ziploc bag and snip off a *small* piece of a corner. Instant icing bag!

Start by piping one horizontal line across the football.


Next, pipe 3 or 4 short, evenly-spaced vertical lines over the horizontal one you just made.


That's it! You now have a football! You can handle that, right?


You can see above that I have several stray specks of chocolate on my serving platter. If you have this problem, use a damp paper towel to carefully wipe off any extra chocolate or frosting and you're done!

For an even more impressive presentation, you can make coconut grass to scatter around your platter.

Dump a cup or so of coconut in a bowl, and add several drops of green food coloring.


Stir until coconut is evenly coated, adding more food coloring as necessary.


It won't be perfect; you'll have darker and lighter bits, but I think that only adds to the look.

Sprinkle the coconut around the footballs on your tray.


Amazing how something so simple can really add to the "wow" factor!

Look at the cute mini footballs! I think a whole tray of these would be adorable!
