On the menu today: Gratineed Pineapple by Wives with Knives. (I just love that blog name! Hilarious.)

Phew! This weekend has been a blur, to say the least! A family wedding on Saturday and moving into our new home (yay!) on Sunday has left this momma worn out!
The wedding was lovely, though, and it is indescribably nice to be in a house again with my little family after spending the last two years in a shoebox-sized apartment. We have space to stretch, and breathe, and create, and cook!
You know by now that I love cooking, and things like weddings inspire me to cook fancier things. I would say this dish qualifies as fancy.
The presentation of this dish is certainly impressive. Even though it's actually pretty easy to prepare, I felt sort-of like a professional chef (or something) serving this to friends.
The pineapple is stuffed with coconut, gingersnaps, macadamia nuts, and sweetened condensed milk (my favorite), along with a little rum. If you don't care to use alcohol you could always omit it or use rum-flavored extract instead.
The taste of all those delightful ingredients together is wonderful, and a little reminiscent of a tropical island. I think this would be fun to serve at a luau.
While this dish is designed as a dessert, I personally feel like it could also be an impressive first course or appetizer.
The only problem I had with this recipe was serving and eating it; it wasn't the easiest thing to actually eat. Wives with Knives has since updated the recipe, making it easier to serve and eat (although, in my opinion, not quite as pretty looking).
Final rating: 4 out of 5 stars. Delicious! You should give it a try.
Have you tried this recipe? Do you agree with my rating? What other fruit-based desserts do you like?
Check back next Monday as I review another Pinterest recipe, and stay tuned throughout the rest of the week for some more posts in my series on throwing a DIY Western Party.
