You guys, I LOVE avocados. I eat them plain, as guacamole, in smoothies, you name it. So when I came across this little gem on Pinterest, I knew I had to try it. Avocado stuffed with an egg and bacon? Sounded like a win to me!
The recipe was quick and simple, which is definitely a plus, and can easily be made vegetarian by omitting the bacon. Although I typically make recipes exactly as-is for Meal Review Monday, I did sprinkle some cheese on top of mine, because as much as I love avocados, I love cheese more. Seriously, I could eat cheese on everything.
The only problem I had with this recipe was that I did not scoop out enough avocado, because I wanted more avocado-y goodness in the finished product, and the eggs spilled over the side. Needless to say, my avocados were not as pretty as the ones pictured here, but they were tasty! Of course, I always use large eggs, so that may have been my problem. If you make these yourself, you might use medium eggs or scoop out more avocado.
These tasted great, and are a healthy option for breakfast--or dinner, which is when I actually made them. I wish they had had more spices--and cheese, as I mentioned. That's the only thing that keeps me from rating them a little higher.
Final rating: 3 out of 5 stars. It's a good base recipe, but (in my opinion) needs to be fancied up a little.
